Professor Oddenstein is one of the main characters in the quest Ernest the Chicken. He can be found in the attic of Draynor Manor. The Professor has turned Ernest into a chicken, and needs your help finding parts for his machine, which is needed in order to turn Ernest back to normal. You need to find the oil can , pressure gauge , and rubber tube for him to turn Ernest back into a human.

During the Witch's House quest players find the diary of the witch Nora T Hagg's, which states that Professor Oddenstein designed the security system that she uses to keep her experiments private.
Despite his dealings with witches and him and turning Ernest into a chicken, Professor Oddenstein does not seem to be evil or bad.
